Ten Speed Press. 2015. 272p, illus., index. $35.Here are two cookbooks by food columnists, Bittman for the NY Times and Miglore, for Food52.com. Neither is an essential book for one’s cookbook collection but both are helpful –fruitful—in showing variants on standard recipes (Bittman) or ways to improve favorites (Miglore).Bittman’s Kitchen Matrix is intriguing in its organization. He provides base recipes and shows how each can be varied, even moved from one national cuisine to another. You have a central recipe, usually quite simple. Around it or following it, is a number (4, 6, 8, even 12) of greatly different tasting but similarly prepared variants. Bittman is a minimalist chef. (His 2014 book, an Amazon Best Book of the year, is entitled How to Cook Everything Fast. My wife bought that book at the same time that I bought this one.) Michael Ruhlman, no slouch at these matters, says that Miglore’s cookbook is his “new favorite.” While it has many recipes that are new to me, the book’s outstanding virtue is to help reconceptualize how to make dishes one already makes: only make them better now.Both books are elegantly presented and both fill a niche on my cookbook shelf that needs filling. When I cook, I like to set out the contents of refrigerator and larder and then browse through cookbooks to see how I can vary my recipe. Here, both of these books are a help.
⭐I really dislike the title of “cook book”. Two me, there are “recipe books” and “books for cooks”. Recipe books are like learning to play a specific song on guitar — you may get great at it and can replicate it over and over, but you won’t understand the theory on behind it or how to improvise.Kitchen Matrix is like a music teacher that teaches you how to roughly play a song, but then shows you how to improvise on it and bring your own creativity into the mix so that you can play limitless variations. If you are very anal retentive, love following processes to the letter, and/or need a lot of hand holding, this book is not for you.Without reiterating what a number of other reviewers have said about this book, let me just tell you what I love about it. First, the photography. I just love pictures in cooking books and this book is packed! I don’t think a single dish is without a photograph and many of them are right up there with the pics from Modernist Cuisine or Donna Ruhlman.Second, this book is empowering. As I mentioned above, it doesn’t hold your hand, nor does it have the specificity that you’ll find in Modernist Cuisine recipes. This book has faith in you, your taste buds, and your cooking sense. It gives you a concept or ingredient or theme, grounds you, then unleashes you. I came away from Kitchen Matrix feeling full of ideas and anxious to begin trying them out. What higher praise can you give a cooking book than to say that?
⭐Totally brilliant! This is the second one I have bought. It’s super easy to use because of the great pictures, it has loads of great yet simple ideas on how to use food you have in the fridge/cupboards in new, easy and quick ways
⭐This is an excellent resource if you create a lot of dinner parties, but each recipe stands out on it’s as well. In fact, the recipes are just how I like them with simple ingredients and simple, (quick-read) instructions. As a professional Chef working in the industry, I feel this is a great resource to anybody’s library.
⭐great ideas, well laid out. Works well with my CSA box of vegies…I see what I’ve got in the box, check out his book and find numerous ways to use the various vegetables. The recipes are well laid out, easy to follow and allow for lots of variations.
⭐I bought this as a gift for my brother and his gf (and matching aprons). They love to cook together. I got a call today that it’s an amazing book. I do want it for myself too.
⭐Now this is my new favourite cookery book!! This guy knows what he is talking about, but doesn’t bore you to tears and whilst I have not had chance yet (due to my mum borrowing it), I will definitely be reading this one from cover to cover. Every page is packed with the most amazing tips and advice. Being as I tend to decide what I am cooking as I am looking in the cupboards to see what we have in, this book was right up my street.There are some great recipes, and ones I wasn’t so keen on became interesting due to the numerous variations he gives for a lot of the ingredients.In a nutshell, my advice to you would be; If you only ever buy one cookery book in your lifetime, be damn sure its this one!!!!! 😉
